Ditch the soggy frozen garlic bread and upgrade to this fresh homemade roasted garlic bread. I will admit, its not often my daughter (she’s 7) falls in love with something I make with ‘green stuff’ on it, but this garlic bread was a huge hit! Anytime we can opt out of making a PB&J is a win in my book. With only 7 ingredients and about 15 minutes of active cooking time, it just makes sense to make your own garlic bread.
Tips for prepping
To make this dish easier you can roast the garlic ahead of time and keep it in an airtight container in your fridge. It will stay fresh up to 3 days. In addition, you can chop up your parsley ahead of time and throw it in a plastic bag with a paper towel to absorb any excess moisture. You can even make the compound butter together ahead of time to really cut down on the prep time later. I highly recommend making sure it is softened prior to spreading on the ciabatta though.
What makes this recipe so special?
The secret to really good garlic bread is to keep it simple. Roasting the garlic mellows out the pungent flavor and helps it develop an almost nutty taste. By baking the garlic in the oven, you get this soft bulb that you can actually squeeze the garlic out of. Throwing the ciabatta in the oven at 400° for 20 minutes creates the perfect balance of a crisp outside with a soft and buttery inside of each slice. Keeping it simple and taking the time to roast the garlic will take your garlic bread game to the next level. I love to serve this with a simple spaghetti dish on a weeknight.
