For those that are sensitive to spicy food, you can reduce the amount of chipotle peppers or just use the adobo for a milder flavor. The chicken freezes great so you can make a large batch, shred it, and throw it in the freezer for up to 4 months. Then, you can thaw it out during the day, crisp it in a pan with oil, or just microwave it for an easy homemade meal.
