A great weeknight recipe, chili lime chicken is a simple dish that can be prepped ahead of time to marinate overnight or can be finished in just an hour. Our skillet is a staple in our home year-round but gets more attention when the weather is colder outside, and I don’t feel like firing up the grill. This simple chili lime marinade can work its magic in just 30 minutes, but the flavors are much more pronounced if it sits in the fridge for a few hours.
I like to use chicken thighs for this recipe as they are my preferred cut, but chicken breasts will work as well. Just remember, a thigh will come out moister than the leaner breast.
Lastly, the key to cooking the perfect chicken is making sure it is not overcooked. If you don’t already have one, I recommend picking up an instant read thermometer, so you are not overcooking your chicken and any other meats as well!
