Barbacoa Tacos

These barbacoa tacos are easy to throw together on a lazy Sunday afternoon with little prep time. Brown them in a Dutch oven, then set it and forget it for 3 hours. The meat will fall apart at this point and you will have a flavorful, juicy, tender taco to that will have you coming back to this recipe time and time again. The meat pairs well with pickled onions, some cotija cheese crumbles, and a salsa verde of your choice. If you cannot find cotija cheese in your local grocery store, you can substitute feta instead.
