Our family went out to eat last week and I ordered the ‘Masitas De Cerdo’ off the menu of the restaurant we went to. Braised then fried, the pork is soft and juicy on the inside while crispy on the outside. Cooking the pork over medium low heat for 90 minutes with the lid slightly off the pot allows the water to evaporate. Then the magic begins! The pot will begin to make a crackling sound as the lard fries the pork chunks. Removing the pork and saving the remaining fat, we add onions to the mix with a freshly made mojo consisting of garlic, orange juice, salt, pepper, and oregano. After a few minutes of cooking with the lid on your pot, the onions are done, and it is time to assemble. I usually tend to make quicker meals, but this one is a crowd favorite when I have time to hang around the house and cook. Perfect for a lazy Sunday!
Tips for this recipe
- To save on prep time, you can cut the pork up and the onions ahead of time
- Don’t cut the pork too small or it will be dry inside when you crisp it in the fat
- If you like saucy meals, double the mojo
