A flavorful and easy salad with just 4-key ingredients, this sweet potato and kale salad is a great meal for fall and winter alike! I like to pair the mellow flavors of sweet potato with a pungent cheese to balance the flavors. Crispy nutrient packed kale is a super food full of antioxidants and iron that will leave you feeling refreshed. I use a maple Dijon vinaigrette to dress the salad that brightens up the flavor.
We just got back from a week-long trip at Disney World where most of the options are fried foods or sweets. I tend to find myself craving vegetables after binging on all the various treats Disney has to offer.
The maple Dijon vinaigrette is super easy to make. After you start making your own dressing, you’ll never go back to the store-bought ones. You can use a whisk, a blender, or a food processor to emulsify while adding the oil. Any oil can be used for this, I just personally like the flavor of EVOO.
Time Saving Tips
- Use pre-slivered almonds to cut down on prep-time
- Boil the sweet potatoes first while making the dressing and prepping other ingredients
- Pick up already prepped kale
